try these yummy recipes made during FNP classes

Try a Healthy New Recipe

Zucchin Casserole
1 pound sausage
1 small onion (diced)
3 small zucchini (diced)
3 small yellow squash (diced)
3 medium potatoes (peeled & diced)
1 can Italian stewed tomatoes (cut up)

Brown sausage and onion together in askillet; drain. Mix all ingredients together and place in a casserole dish.
Cover with foil and bake at 350 degrees for 45 minutes.
    Note: Instead of using the Italian stewed tomatoes, you could use fresh diced tomatoes with some Italian spices added.


Cinnamon Munch


1/3 cup sugar
1 teaspoon cinnamon
4 Tablespoons margarine
4 cups rice chex cereal
1 cup small pretzels
1 cup raisins
  1. Combine sugar and cinnamon. Set aside.
  2. Place margarine in a 2 quart deep bowl and microwave on HIGH for 40 seconds or until melted.
  3. Add rice chex, pretzels and raisins; stirring gently until evenly coated.
  4. Microwave on HIGH for 1 minute; Stir.
  5. Sprinkle the sugar-cinnamon mixture evenly over the cereal mixture, stirring to coat.
  6. Microwave onHIGH for 1 minute.
  7. Stir and spread on paper towels to cool. Makes 5 - 6 cups.



Turkey Pinwheel Appetizers
1 container (8 oz) garlic and herb cream cheese
6 flour tortillas for burritos, 8 inch
6 slices turkey
3 small Roma tomatoes, chopped (1 1/2 cups)
3 cups fresh baby spinach leaves

  1. Place tortillas on microwaveable plate or paper towel; microwave uncovered on HIGH 10 - 15 seconds to soften
  2. Spread about 2 Tablespoons cream cheese over each tortilla
  3. Top with a slice of turkey, chopped tomatoes and spinach
  4. Roll up lightly; then wrap in plastic wrap
  5. Refrigerate 2 - 3 hours to blend flavors.
  6. Trim ends of rolled tortillas if desired; Cut each roll into eight 1-inch slices. Arrange with cut side down on serving plate.
  7. Enjoy. Makes 48 pinwheels.


Apple Pizza
2 cups applesauce
1 teaspoon vanilla extract
1 tube refrigerated pizza dough
2/3 cup raisins
2 cups unpeeled, thinly sliced tart apples
2 Tablespoons powdered sugar

  1. In a medium saucepan, combine applesauce and vanilla. Cook over medium heat, until reduced by half; set aside.
  2. Preheat oven to 450 degrees
  3. Spray 12-inch pizza pan with nonstick cooking spray
  4. Pat dough onto pizza pan
  5. Spread half of applesauce over dough to within 1/2 inch of edge.
  6. Sprinkle with 2/3 cup raisins. Arrange apple slices over pizza, covering raisins.
  7. Spread remaining applesauce over apple slices.
  8. Bake 15 - 20 minutes or until edge of crust is lightly browned.
  9. Cool & garnish with additional raisins, if desired. Sprinkle with powdered sugar.
  10. Enjoy!



Pumpkin Mousse
1 ounce pkg. sugar-free instant vanilla pudding mix
1 1/2 cups skim milk
1 cup canned pumpkin
1 teaspoon pumpkin pie spice
1 1/2 cups light frozen whipped topping

  1. In a mixing bowl, beat the pudding mix and milk until well blended. Blend in the pumpkin, the pie spice, and fold in the whipped topping.
  2. Spoon into dessert glasses and chill. Top with fat-free whipped cream for garnish. Sprinkle a little ginger on top, if desired.

Serves 4.
Each 3/4 cup serving: 137 calories, 3 g gat, 3 g saturated fat,
21 g carbohydrate, 1.5 mg cholesterol, 380 mg sodium, 1.5 g. fiber, 4.5 g protein


Light Pumpkin Bread
1/3 cup oil
1 cup sugar
2 eggs
1 cup pumpkin
1 2/3 cup four
1/4 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon baking soda
1/4 teaspoon salt
1/3 cup water
1/3 cup unsweetened applesauce

  1. Mix all ingredients together in a large bowl until well blended
  2. Pour into 2 small loaf pans that have been coated with vegetable spray
  3. Bake at 350 degrees for 45 minutes or until an inserted toothpick comes out clean
  4. Enjoy!



Apple Witch
1 small apple
1 large round cracker
1 Bugle snack
2 or 3 chocolate chips
1 raisin
peanut butter
Chinese noodles

  1. Wash apple, remove stem, and set flat side up.
  2. "Glue" the cracker to the top of the apple, using the peanut butter
  3. Using the same "glue", attach the bugle to the top of the cracker
  4. Attach the chocolate chips for eyes, raisin for nose and noodles for hair.


Critter Crunch
1 cup animal crackers
1 cup teddy bear shaped graham crackers
1 cup small pretzels
1 cup yogurt-flavored raisins
1 cup cheese balls
1 cup candy-coated chocolate candies
10 ice-cream cones

  1. Mix all ingredients except ice-cream cones
  2. Serve snack in cones
  3. Store in covered container.



Chopped Broccoli Salad
1 pound frozen chopped broccoli, thawed and well-drained
1/2 cup chopped onion
1/2 cup cup chopped celery
1/2 cup shredded chedder cheese
3 strips bacon: fried, drained and crumbled
1/4 cup chopped pecans

Dressing:
1/4 cup mayonnaise
1 1/2 Tablespoons brown sugar
1 Tablespoon vinegar

  1. Place all salad ingredients in a medium size bowl. Blend together the mayonnaise, brown sugar and vinegar
  2. Stir above into salad



Turkey Waldorf Wraps
12 soft tortillas (white or whole-grain)
3/4 cup reduced-fat mayonnaise
12 slices turkey (Healthy Choice)
1 1/2 cups chopped apple (unpeeled) (Melrose or Gala)
3/4 cup chopped celery
3/4 cup raisins
leaf lettuce

  1. Spread 1 tablespoon maonnaise evenly over each tortilla.
  2. Then add 1 slice of turkey, 2 Tablespoons apple, 1 Tablespoon celery, 1 Tablespoon raisins, and a leaf of lettuce on each tortilla.
  3. Fold the left and right sides inward, then roll the tortilla, starting from the bottom to the top.
  4. Cover with plastic wrap and refregerate.
  5. Serves 6


Sweetheart Pizzas
1 (10-oz.) can refrigerated pizza crust
1 (8-oz.) can pizza sauce
4 os. shredded cheese
pepperoni, mushrooms, green pepper, onions, ham

  1. Heat oven to 425 degrees
  2. Lightly spray large baking sheet with nonstick cooking spray.
  3. Unroll dough; cut into quarters, and place on baking sheet. Cut 1-inch slit of one long side of each dough portion. Slightly separate each cut slit and gently press dough into heart shape 6 inches long and 5 inches wide.
  4. Pinch dough together to shape point of heart
  5. Create slight rim on edge of dough.
  6. Bake for 5 minutes or until light golden brown.
  7. Cover each crust with pizza sauce and desired toppings, and sprinkle evenly with cheese.
  8. Return to oven and bake 6 to 8 minutes or until crust edges are golden and cheese is melted.
  9. Makes 4 pizzas.


Juicy Jigglers
2 1/2 cups boiling juice (do not use cold water)
2 packages (8-serving size each) gelatin, any flavor

  1. Stir boiling juice into gelatin in large bowl 3 minutes until completely dissolved
  2. Pour into 13 x 9 pan
  3. Refreigerate at least 3 hours or until firm
  4. Dip bottom of pan in warm water about 15 seconds
  5. Cut into decorative shapes with cookie cutters all the way through gelatin or cut into 1-inch squares.
  6. Lift from pan
  7. Enjoy!


Creamy Jugglers
2 1/2 cups boiling water
2 packages (8-serving size each) gelatin, any flavor
1 cup cold 2% milk
1 package (4-serving size) instant pudding

  1. Stir boiling water into gelatin in large bowl until completely dissolved
  2. Cool 30 minutes at room temperature
  3. Pour mild into medium bowl
  4. Add pudding mix and beat wiht wire whisk 1 minute
  5. Quickly pour in gelatin
  6. Stir wiht wire whisk until well blended
  7. Pour into 13 x 9 pan
  8. Refrigerate 3 hours or until firm
  9. Dip bottom of pan in warm water about 15 seconds
  10. Cut into decorative shapes with cookie cutters all the way through gelatin
  11. Lift from pan
